Blueberry and White Chocolate Rolled Oats Biscuits

Ingredients

  • 226g room temperature butter
  • 1.5 cups brown sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 2 cups traditional oats
  • 1.5 cups plain flour
  • 1 teaspoon bi-carb soda
  • Pinch salt
  • 1 cup white chocolate chip bits
  • 1 cup fresh blueberries

Instructions

  1. Preheat fan forced oven to 170C
  2. Cream the butter and brown sugar until light and fluffy
  3. Add egg and vanilla and beat until combined
  4. Mix in oats, flour, bi-carb and salt until combined
  5. Stir in white chocolate chips and blueberries
  6. Drop dough by heaping a dessert spoonful about 4cm apart on trays lined with silicone mat or baking paper
  7. Bake for 12-14 minutes or until light brown.
