Sponge

Ingredients

  • 4 large eggs (room temp)
  • 3/4 cup cornflour
  • 3/4 cup caster sugar
  • 1 tablespoon custard powder
  • 1 teaspoon cream of tarta
  • 1/2 teaspoon bicarb-soda

Instructions

  1. Preheat oven to 160C (fan forced) or 180C not fan forced
  2. Grease and line 2 x 22cm round cake tins
  3. Sift cornflour, custard powder, cream of tarta and bicarb soda together three times (you want to add in lots of air)
  4. Beat eggs and sugar until stiff
  5. Fold in dry ingredients, lightly, with a spoon
  6. Pour into prepared tins
  7. Bake for 20-25mins, or until light and springy when touched in the middle
