Banana choc chip muffins

Is anyone else that has a family that loves bananas so much one week, but will refuse to eat them the following week?  Plus since it is summer here in Australia, they ripen very quickly.  I hate to waste food, so muffins are a quick solution that are also super tasty, and can be frozen for some portion control (hahaha)


 

Ingredients

  • 190g plain flour
  • 1 teaspoon bi-carb soda
  • 1/2 teaspoon cinnamon
  • Pinch salt
  • 85g salt reduced butter, melted, but not too hot
  • 135g brown sugar
  • 1 egg
  • 1.5 teaspoons vanilla
  • 2 medium bananas
  • 1/2 cup dark choc chip bits

Instructions

  1. Preheat oven to 180C, fan forced
  2. Line a 12 hole muffin tin with liners
  3. Mash bananas with a fork, add the melted butter, vanilla, egg and brown sugar
  4. Mix together the flour, cinnamon, bi-carb and salt
  5. Combine the dry and wet ingredients, and fold in the choc chip bits
  6. Place the mixture, evenly, into the 12 holes. Place in the oven and bake for 16-20 minutes
  7. Remove from oven and leave in the tray for 5 minutes. Remove and cool on a wire rack
