Lemon Slice

Ingredients

  • 227g crushed Marie biscuits
  • 1 cup desiccated coconut
  • 1/2 tin condensed milk
  • 113g butter
  • Juice of 1 lemon and rind

Instructions

  1. Place butter in a saucepan and slowly melt
  2. Combine the crushed biscuits and coconut
  3. Add the melted butter to the crushed biscuits and coconut
  4. Add in condensed milk, lemon juice and lemon rind and stir to combine
  5. Pour into the a container, ice with lemon icing and allow to set in the fridge
  6. Use a clean ruler as a guide to cut straight lines and cut into as many pieces as you like
