Sweet potato choc chip muffins

Ingredients

  • 2 large eggs
  • 485g sweet potato
  • 250ml milk
  • 3/4 cup melted butter
  • 2 cups self raising flour
  • 1 teaspoon vanilla
  • 3/4 cup dark choc chip bits

Instructions

  1. Preheat oven to 180C
  2. Grease a mini muffin pan
  3. Roast the sweet potato until soft
  4. Peel the sweet potatoes and mash with a fork until smooth
  5. Add the milk, eggs, vanilla and butter into the sweet potato and mix well
  6. Add in the self raising flour and mix until just combined
  7. Add in the choc chip bits and stir through to distribute
  8. Add evenly to the muffin holes
  9. Bake for 20 mins
  10. Cool in the tray for 5 mins, the remove from the tray and finish cooling on racks
  11. These can be frozen!
