Brandy Snaps

Ingredients

  • 113g butter
  • 4 tablespoons golden syrup
  • 2 level teaspoons ground ginger
  • 1 teaspoon grated lemon rind
  • 85g caster sugar
  • 85g plain flour

Instructions

  1. Preheat oven to 160C
  2. Combine butter, lemon rind and golden syrup in saucepan and melt slowly
  3. Add sugar and combine until sugar has dissolved
  4. Sift flour and ginger into the saucepan and mix well
  5. Put small teaspoons into a lined baking tray, leaving a large space between each one
  6. Bake for 5 mins
  7. Leave to cool for a little
  8. Lift off carefully and around a greased piece of dowel
  9. Fill with cream and fruit just before serving
