Chicken and Lentils, Freekeh & Beans Soup

With the cold weather setting in and the need for something a healthier, this hearty soup will do the trick!  I generally feel hungry about an hour after eating soup, unless there is warm bread involved.  Because of the superblend mix, this really fills me up.

It was inspired by McKenzies Chicken and Kale soup.

Ingredients

  • 1 cup McKenzie's Lentils, Freekeh & Beans SuperBlend Mix
  • 1 tbs olive oil
  • 1 leek, sliced
  • 4 garlic cloves, finely chopped
  • 1 tbs ginger, finely greated
  • 1/2 tsp ground turmeric
  • 1 chicken breast, diced
  • 1 litre chicken stock
  • 1 litre water
  • 1 carrot, sliced
  • 1/4 wombok, shredded
  • 1 bunch pak choy, shredded
  • Salt and pepper to taste

Instructions

  1. Prepare SuperBlend Mix according to on-pack preparation instructions.
  2. Heat the oil in a large pot and add leek, garlic, ginger and tumeric, cooking until leek is just tender
  3. Add chicken pieces, cooking until just seared
  4. Add the stock, water, SuperBlend and carrot. Bring to the boil and reduce to a simmer for approx. 15-20 minutes or until blend is just tender
  5. Add wombok and pak choy and stir through until just wilted
  6. Season to taste
