Ham and Potato Soup

Recipe adapted from: Dinner then dessert

Ingredients

  • 1.3kg of a mashing potato, peeled and diced
  • 1 onion, dice
  • 1/2 cup diced celery
  • 450g cubed ham
  • 1/4 teaspoon fresh cracked pepper
  • 1/4 cup plain flour
  • 4 cups salt reduced chicken stock
  • 1.5 cups thickened cream
  • 1/2 cup light sour cream
  • Finely chopped parsley to serve

Instructions

  1. Add potatoes, onions, carrots, celery, ham, pepper and chicken stock to your slow cooker
  2. Cook on high for 5hrs, covered
  3. Using a potato masher, mash about 25-30% of the mixture
  4. In a separate bowl, add flour, cream and sour cream and whisk everything together
  5. Cover and cook on high for additional 15 minutes
  6. Serve topped with parsley
